There are some meals you eat because you are hungry, and then there are meals you remember because every ingredient seems to speak for itself. My visit to BORU Ramen Noodle & Poke Bar in Marietta, Georgia turned out to be the second kind. Located in the heart of Marietta Square, BORU offers the kind of casual, modern dining experience that feels equally suited for a quick lunch, a solo reset, or a low-key foodie moment when you want something fresh but still packed with personality.

On this visit, I ordered the 2 Protein Poke Bowl with brown rice, raw salmon, edamame, cucumber, cilantro, jalapeño, onion, spicy mayo, yum yum sauce, eel sauce, masago, and carrots. At first glance, it may sound like a straightforward combination. But once I sat down with the bowl in front of me and started working my way through each layer, it became clear that this was one of those meals built on contrast, balance, and texture.

The first thing I appreciated was the bowl’s presentation. It looked clean, colorful, and intentional. Even before the first bite, I could already tell I was in for something vibrant. The orange carrots stood out immediately, the masago gave the bowl a bright pop of color, and the sauces drizzled over the top created a glossy finish that hinted at richness and flavor depth. It was visually inviting without trying too hard. Sometimes poke bowls can look overcrowded or messy, but this one still allowed each ingredient to hold its own identity.

I started with the brown rice, which formed the base of the entire bowl. Brown rice is often overlooked because it does not have the flash of sauces or toppings, but in a bowl like this, it matters. It was hearty, nutty, and slightly chewy in a way that grounded the rest of the ingredients. It gave the bowl substance. Had this been white rice, the flavor would have been softer and more neutral, but the brown rice brought an earthy backbone that made the bowl feel a little more wholesome and textured. It anchored all the brighter, saltier, creamier notes happening on top.

Then came the raw salmon, and this is where the bowl began to really shine. Salmon in a poke bowl has to feel fresh, and this did. In this bowl, it brought a soft pop and a tender bite that paired nicely with the salmon. Edamame also added a fresh, green element that helped balance the richer sauces. It kept the bowl from leaning too heavy and reminded me that poke is at its best when it feels both indulgent and refreshing at the same time.

The cucumber worked exactly the way cucumber should in a bowl like this—it cooled everything down. With spicy mayo and jalapeño in the mix, that cooling crispness mattered. Cucumber brought a watery crunch that refreshed my palate between bites. It acted almost like a reset button. Each time I got a forkful with cucumber, the bowl felt lighter and brighter. It added that clean, garden-fresh quality that kept the flavor profile from becoming overly rich.

I also loved the role of the cilantro. Cilantro can be divisive for some people, but when it works, it really works. In my bowl, it added a fragrant, herbaceous lift that cut through the creaminess of the sauces and the oil-rich softness of the salmon. It gave the entire bowl a fresher aroma and made the flavor feel more alive. Rather than sitting in the background, the cilantro floated through the bowl in little bursts, adding a green sharpness that helped tie together the cool vegetables and the warm undertones of the sauces.

The jalapeño brought the heat, but it was not aggressive. It did exactly what I wanted it to do: it added a gradual kick that built with each bite. Jalapeño in a poke bowl should flirt with the tongue, not attack it, and this one brought that gentle, peppery burn that heightened everything else around it. It sharpened the sweetness in the sauces and gave the salmon more dimension. I liked that it brought excitement without overpowering the bowl. It gave the meal edge.

The onion added a slight bite and pungency that rounded out the fresher ingredients. Onion can easily dominate a dish if used too heavily, but here it brought just enough sharpness to remind me it was there. Combined with the cucumber and cilantro, it contributed to the bowl’s crisp, bright side. Against the eel sauce and yum yum sauce, the onion created a nice tension between sweet and sharp.

Now let’s talk about the sauces, because this is where the bowl’s personality really came alive.

The spicy mayo added creamy heat and richness. It coated the salmon and rice with a smooth, slightly fiery finish that made each bite feel fuller. It did not just add spice—it added body. The bowl would have still been good without it, but the spicy mayo gave it that indulgent, craveable quality that makes you keep going back for another bite.

The yum yum sauce introduced sweetness and creaminess in a softer, more playful way. Where the spicy mayo had a little attitude, the yum yum sauce was mellow and comforting. It gave the bowl a subtle sweetness that helped round off the jalapeño and onion. I liked how it made the overall flavor profile more balanced, almost like it softened the sharper corners of the bowl.

The eel sauce was probably the deepest flavor in the entire dish. It brought that sweet-savory, almost smoky richness that lingered on the tongue. Thick and glossy, it added contrast to the cooler, fresher ingredients. Every time I caught a bite with eel sauce, it felt darker, bolder, and more umami-forward. It was the ingredient that gave the bowl drama.

Then there was the masago, which did more than just make the bowl look beautiful. Those tiny orange roe added little pops of briny flavor that burst in the mouth and gave the bowl a subtle oceanic saltiness. They were delicate but impactful. The masago made the poke bowl feel more authentic, more textured, and more layered. It was that final touch that made the bowl feel polished rather than basic.

And finally, the carrots brought color, crunch, and sweetness. Their crisp texture was important because so many other ingredients in the bowl leaned soft or creamy. The carrots cut through all of that with a clean snap. Flavor-wise, they introduced a natural sweetness that felt earthy and uncomplicated. They made the bowl brighter and helped stretch the contrast between rich and fresh.

What I appreciated most about this meal was how every ingredient had a role. Nothing felt random. Nothing felt like filler. The brown rice grounded it. The salmon enriched it. The cucumber cooled it. The jalapeño energized it. The sauces tied it all together. Bite after bite, I found myself noticing different combinations—some cooler and cleaner, some richer and spicier, some sweet and savory all at once.
